Ingredients
  

  • 4 cans black beans⁠
  • 4 Tbsp olive oil⁠
  • 1 cup yellow minced onions⁠
  • 1 plum tomato chopped⁠
  • ½ cup finely minced green pepper⁠
  • ¼ cup chopped cilantro⁠
  • 1 Tbsp balsamic vinegar⁠
  • 1 Tbsp sugar⁠
  • 1-2 cups vegetable broth⁠
  • 2 Tsp soy sauce-can use low sodium⁠
  • 1/8 Tsp lemon pepper seasoning⁠
  • 2 large garlic cloves⁠
  • Sour cream and cilantro sprig for garnish⁠
  • Chopped onions for garnish⁠

Instructions
 

  • Heat oil in skillet and sauté onions. Add remaining ingredients, beans last.⁠
  • Cover and cook ½-1 hour. Serve with dollop of sour cream and cilantro sprigs. Top with chopped onion.⁠
