Queen of Quick – Black Bean Soup
A quick and highly nutritious black bean soup recipe packed with protein and other health benefits.
Ingredients
- 4 cans black beans
- 4 Tbsp olive oil
- 1 cup yellow minced onions
- 1 plum tomato chopped
- ½ cup finely minced green pepper
- ¼ cup chopped cilantro
- 1 Tbsp balsamic vinegar
- 1 Tbsp sugar
- 1-2 cups vegetable broth
- 2 Tsp soy sauce-can use low sodium
- 1/8 Tsp lemon pepper seasoning
- 2 large garlic cloves
- Sour cream and cilantro sprig for garnish
- Chopped onions for garnish
Instructions
- Heat oil in skillet and sauté onions. Add remaining ingredients, beans last.
- Cover and cook ½-1 hour. Serve with dollop of sour cream and cilantro sprigs. Top with chopped onion.
