Method
- Mix all ingredients except chocolate chips in food processor.
- Process until smooth.
- Pour into 8x8 Pyrex dish sprayed with non-stick spray
- Add Chocolate chips and swirl into batter
- Bake at 350 degrees for 35-40 minutes
- **Save sweet potato skins to toast up for a high fiber snack- see below
