Queen of Quick - Spinach Salad with Strawberries

A cooling salad for spring or summer that is easy to make and packed with nutrients and health benefits.
Prep Time 15 minutes

Course: Dinner, Lunch, Side Dish

Ingredients
  

  • 1 Baby Spinach bag or container- chopped
  • 1 Red onion-finely chopped
  • 2 cucumbers-chopped small bite size
  • 1/2 cup Dried strawberries quartered or can use any dried fruit of choice
  • 6 Hard Boiled eggs
  • 1/2 cup Honeyed pecans
  • Brianna’s Blush vinaigrette

Method
 

  1. First chop spinach and put in large
  2. Add chopped cucumber and strawberries
  3. Before serving add eggs and pecans
  4. Toss ingredients gently to mix
  5. Add vinaigrette to just lightly dress the salad-

You can adjust portions of any of the above to tailor to your own tastes
