Queen of Quick (Modified) - Quinoa, Edamame and Mint Tabouli

A quick, easy tabouli modified from Michael Solomonov's Zahav Cookbook

Ingredients
  

  • 1/2 cup quinoa
  • 1 cup edamame beans, thawed
  • 1 cup chopped parsley
  • 1/4 cup diced red onion or sweet onion
  • 3 tbsp lemon juice
  • 3 tbsp olive oil
  • 3 tbsp fresh mint, chopped
  • ground pepper and kosher salt to taste

Method
 

  1. Cook the quinoa in 1 cup boiling water, salted water in small saucepan, covered, fo 15-20 minutes, until all the liquid has been absorbed.
  2. Thaw edamame beans according to package-stove top or microwave until they are tender and mashable.
  3. Combine the quinoa and edamame’s with parsley, onion, lemon juice, oil and mint. Add salt and pepper to taste.
  4. Toss and serve.
