Queen of Quick - Cucumber Salad Recipe

A quick and healthy cucumber salad recipe to keep you cool in the warmer months.
Servings: 8

Ingredients
  

  • 2 long English cucumbers
  • 1 medium sweet onion
  • ¼ cup white vinegar
  • ½ cup water
  • 1-2 tablespoon sugar or sweetener of choice
  • 1/3 cup fresh dill chopped
  • 1 teaspoon salt
  • ½ teaspoon pepper

Method
 

  1. Slice cucumber in half and then in slices
  2. Slice onion in thin strips
  3. Mix cucumber and onions in large bowl
  4. Season with salt and pepper
  5. Mix white wine vinegar, water and sugar in small bowl
  6. Taste and supplement water or sugar
  7. Pour over cucumbers and onions and stir well
  8. Sprinkle some fresh chopped dill and mix
