Method
- Preheat oven to 375 degrees
- Line rimmed pan with parchment paper and coat with non-stick spray
- Slice sweet potatoes horizontally into ½ inch rounds and place separately on the pan so they do not overlap
- Add rounds to large bowl and generously add olive oil until well coated
- Add salt, pepper and garlic powder
- Arrange on pan so they don’t overlap
- Sprinkle just a hint of cayenne pepper on top of sweet potatoes
- Scatter sprigs of rosemary on top
- Bake in 375-degree oven for 35 -40 minutes or in 425-degree oven for 20 -30minutes or until golden brown before burning
