Queen of Quick Cooking - Simple Rosemary Sweet Potatoes

Simple and nutritious rosemary sweet potato recipe perfect for cooler month and preventing illness.

Ingredients
  

  • 2 large sweet potato
  • Olive oil
  • 2 Tbsp salt
  • 1 Tbsp pepper
  • 1 1/2 Tbsp garlic powder
  • 2 Tsp cayenne pepper
  • Handful of fresh rosemary sprigs with leaves removed or 2 Tbsp dried

Method
 

  1. Preheat oven to 375 degrees
  2. Line rimmed pan with parchment paper and coat with non-stick spray
  3. Slice sweet potatoes horizontally into ½ inch rounds and place separately on the pan so they do not overlap
  4. Add rounds to large bowl and generously add olive oil until well coated
  5. Add salt, pepper and garlic powder
  6. Arrange on pan so they don’t overlap
  7. Sprinkle just a hint of cayenne pepper on top of sweet potatoes
  8. Scatter sprigs of rosemary on top
  9. Bake in 375-degree oven for 35 -40 minutes or in 425-degree oven for 20 -30minutes or until golden brown before burning
