Queen of Quick - Carrot, Apple and Raisin Salad

Quick, easy, vegetarian recipe perfect for spring and summer!

Ingredients
  

  • 3 cups raw grated carrots
  • 1 cup diced apple
  • 1/2 cup chopped walnuts
  • 3/4 cup raisins
  • Light Mayonaise

Method
 

  1. Cut up apples into small pieces and cover with orange juice or freshly squeezed lemon juice to prevent browning.
  2. Toss carrots, apples,raisins and nuts together.
  3. Moisten with mayonnaise to taste.
  4. Chill beforeserving.
