Equipment

  • 1 mixer
  • 1 12 cup muffin tin

Ingredients
  

  • 16 oz. farmer cheese
  • 4 eggs
  • ½ Cup coconut sugar
  • 2 tsp vanilla
  • 2 tsp lemon juice
  • Cinnamon sugar

Instructions
 

  • Beat the eggs with the sugar, vanilla and lemon juice
  • Mix in the farmer cheese until well blended
  • Pour into muffin tins
  • Sprinkle top(s) with cinnamon sugar
  • Bake @ 3250 for for 35-40 minutes or until firm
