Savory Mushroom & Onion Muffins

Ingredients
  

  • 2 cups chopped fresh mushrooms about 1 package or 8 oz
  • 3 large eggs lightly beaten
  • 1 cup whole oats not Irish oatmeal
  • 1 cup sharp cheddar shredded cheese optional for dairy-free version, or use ½ cup grated parmesan and ½-2/3 cup cheddar
  • 1 cup chopped onion
  • 1 tablespoon sugar
  • Salt & pepper to taste
  • Optional seasoning: 1 tablespoon oregano and/or garlic powder

Instructions
 

  • Prep the Ingredients: In a large bowl, combine the chopped mushrooms, onions, oats, salt, and pepper. Stir until everything is well mixed.
  • Add the Cheese: Stir in the shredded cheese (if using). This adds richness and flavor, but feel free to skip it if you’re making these dairy-free.
  • Mix in the Eggs: Add the lightly beaten eggs to the mixture and stir well until all the ingredients are fully combined.
  • Season to Taste: Add any optional seasonings, like oregano or garlic powder, for an extra flavor boost. Customize to your taste!
