Peanut Butter Banana Granola Cookies

Queen of Quick Granola Cookies packed with nutrition benefits and only fifteen minutes to prep.
Prep Time 15 minutes
Cook Time 25 minutes
Servings 30 cookies

Equipment

  • 1 food processor

Ingredients
  

  • 2 ripe bananas
  • 4 pitted dates
  • 1 cup nut butter of choice
  • 2 Tbsp maple syrup
  • 1 Tbsp cinnamon
  • 3 cups whole oats
  • 1 cup chopped almonds or nuts of choice
  • ¼ cup roasted unsalted sunflower seeds
  • ¼ cup roasted salted pepitas
  • ½ cup slivered almonds

Instructions
 

  • Preheat oven to 350 degrees
  • In food processor, blend bananas and dates until smooth
  • Add nut butter, maple syrup and cinnamon and process together until well blended
  • As needed: scrape the sides of processor bowl and continue processing until everything is well mixed
  • Scoop contents of processor into a medium-large bowl
  • Add oatmeal and using a large spoon mix with the banana nut butter mixture
  • Stir in nuts and seeds until all is well mixed
  • On a parchment lined cookie sheet, scoop a scant ¼ cup of oat mixture into your palm and press together to form a ball and the flatten it until it holds together
  • Put in the middle rack of preheated oven and bake for 20 minutes or until brown
  • In a convection oven it takes a bit less time- check after 15 minutes
