This Queen of Quick flourless blintz cupcake recipe is kosher, easy and perfect to curb your sweet cravings or bring to a holiday gathering.
This recipe only takes six ingredients total, with the main ingredients being farmer cheese, eggs and coconut sugar. I often substitute regular sugar with coconut sugar as it’s a less refined option. I also like to add a bit of lemon juice to balance the sweet flavor.

Equipment
- 1 mixer
- 1 12 cup muffin tin
Ingredients
- 16 oz. farmer cheese
- 4 eggs
- ½ Cup coconut sugar
- 2 tsp vanilla
- 2 tsp lemon juice
- Cinnamon sugar
Instructions
- Beat the eggs with the sugar, vanilla and lemon juice
- Mix in the farmer cheese until well blended
- Pour into muffin tins
- Sprinkle top(s) with cinnamon sugar
- Bake @ 3250 for for 35-40 minutes or until firm
