This chopped green salad is the perfect lunch or side for spring and summer. East Meets West Nutrition for this Salad

Another benefit of this recipe is that it incorporates yin and yang cooking methods. In Traditional Chinese Medicine and Eastern Nutrition, the chopped greens and apples in this salad are considered cool in temperature, which helps release excess heat in the body. They also support liver health by detoxing the body and moving energy that may have become stuck during the winter. In Western nutrition, apples are also a great source of fiber to help you stay fuller longer and balance your blood sugar throughout the day.

How to Make This Chopped Greens Salad Your Own

Another great thing about this chopped green salad recipe is that you can switch up the ingredients however you like. Not into granny smith apples? No problem! Pick up some honey-crisp or fuji at the grocery store instead. I’m a big fan of walnuts and pecans but you could also substitute for pepita seeds, shaved almonds, or whatever you have in the pantry at home. The beauty of Queen of Quick Cooking recipes is that you can customize and use what you have on hand to substitute.
