This Queen of Quick Israeli Salad was modified From Michael Solomonov’s cookbook Zahav. It’s one of many great recipes from Michael and brings happy memories to mind of when my husband and I traveled to Israel with Michael for a special culinary tour.

Queen of Quick Cooking (Modified)- Israeli Salad with Mango
Ingredients
- 2 Mangoes peeled and cut around the pit into small cubes (3 cups)
- 1 large english cucumber or 3 smaller Persian cucumbers, diced (3 cups)
- 1/4 cup simple sumac onions, plus more for topping
- 3 tbsp fresh mint chopped
- 3 tbsp olive oil
- 2 tsp lemon juice
- 1 tsp kosher salt
Instructions
- Combine all the ingredients in a bowl, toss to combine, and serve with additional sumac onions on top!
