Sometimes all a roasted broccoli recipe needs is some garlic, salt and pepper to take it to the next level! This is another Queen of Quick recipe that you likely have everything you need right in your pantry. Another thing I love about this recipe is that it’s very versatile and can be paired with lots of different proteins depending on your taste.
Broccoli is closely related to cabbage, Brussels sprouts, kale and cauliflower which are referred to as cruciferous vegetables. Broccoli is a nutritional powerhouse full of vitamins, minerals, fiber and antioxidants. The antioxidant content of broccoli may be one of its main benefits for health along with fiber.
Research suggests garlic may have anti-inflammatory and anti-microbial benefits and support bone, gut and heart health, according to registered dietitian Amy Fischer. Registered dietitian nutritionist Stefani Sassos says after cutting or crushing garlic, let it sit for about 10 minutes before adding it to foods or recipes to get the most nutrient benefits.

Queen of Quick Cooking – Roasted Broccoli and Garlic
Ingredients
- 1 head broccoli cut into florets stems included
- 3 tbsp extra virgin olive oil
- 3-4 garlic cloves cut into thin slices
- Garlic powder
- Salt and pepper
Instructions
- Preheat oven to 425 degrees
- Toss all ingredients together in bowl.
- Line roasting pan or cookie sheet with parchment or tinfoil
- Pour ingredients onto pan
- Bake for 20 minutes until broccoli floret are crispy
- Sprinkle with additional salt and pepper to taste
- Serve immediately
